Roquefort-sur-Soulzon owes its location to the collapse of part of the Combalou, a rock formation south of the village, about a million years ago. The world-famous Roquefort cheese has its roots here, in the Roquefort-sur-Soulzon village. The blue cheese is made from milk from sheep that roam the Causses slopes. Many cheese makers' cellars are open to visitors.
